Cooking Directions
Heat up a pancake for a couple of minutes in a frying pan.
Chop the tomatoes in half and add to the frying pan. Whilst cooking crack the egg onto the other side of the frying pan to fry sunny-side up. Put the spinach on to steam for a couple of minutes.
Pop the pancake onto a plate with the spinach, egg and tomatoes, and spoon on the Tracklements Fresh Chilli Jam. Add a sprinkling of salt and pepper if you wish.

- A handful of red, green and yellow baby tomatoes
- 1 egg
- A large handful of spinach
