This tangy lemon chicken is marvelous as a light lunch or super side to a summer supper.
Method
Using a fork, shred the cooked chicken into small pieces. In a separate bowl, mix the Greek yogurt and Tracklements Lively Lemon Pickle, then mix in the shredded chicken. If it is too dry, add in equal measure of yogurt and Lively Lemon Pickle. Garnish with a chopped spring onion and squeeze of lemon.
Serve with a fresh garden salad for a light lunch.
