Taste and add more chutney if desired.<\/p>\n<p>Heat a tbsp of oil in a frying pan over a medium-high heat. Add the courgettes in a single layer and season with salt and pepper. Make sure they don\u2019t overlap. Cook for 3\u20134 minutes, then turn them over and cook for a further 3\u20134 minutes, until golden. Remove from the heat and transfer to a warm plate.\u00a0 Continue until all the courgette and aubergine is cooked and golden.<\/p>\n<p>Grease a 20cm flan tin.
