The combination of mustard and honey lend themselves perfectly to a sensationally simple barbecue marinade for chicken. It’s a one pot wonder and you don’t need to add anything else!
Method
Split the chicken with a heavy knife through the back-bone and flatten. Score the legs through to the bone on both sides so the chicken absorbs the marinade and cooks evenly.
Pre-heat the barbecue. Mix the Hot Wholegrain Mustard, honey and oil and brush two thirds over the chicken. Cook the chicken on a medium heat part of the barbecue for about 10-15 mins on each side, moving it around and turning regularly so it cooks evenly. Towards the end of cooking, brush the rest of the marinade over the chicken to give it a final glaze.
Tip: You can also remove the backbone where there is no real meat prior to cooking and chop it up for a gravy for another time.
Ingredients
A large, good quality free range chicken (alternatively you could use 6-8 drumsticks/thighs)
3 tbsp Tracklements Hot Wholegrain Mustard (or more if you like it hot hot hot!)
1 tsp honey
2-3 tbsp vegetable or corn oil
Salt and freshly ground black pepper
